I found the best peanut butter cookie recipe years ago and have converted it to a gluten free recipe. Give it a try and let me know what you think. I've added chocolate chips too!
1 cup granulated sugar 1 cup packed brown sugar 1 cup margarine or butter 1 cup peanut butter 1 tsp vanilla 2 eggs 2 1/2 cups gluten free flour mix 1 tsp GF baking powder 1 tsp baking soda 1/4 tsp salt chocolate chips if want
Gluten Free Peanut Butter Cookies
Beat together margarine and peanut butter. Gradually beat in the granulated and brown sugars. When combined beat in eggs until fluffy, add vanilla.Mix together the flour, baking powder, baking soda and salt in separate bowl.Mix flour mixture into creamed mixture 1 cup at a time. When completely mixed in fold in chocolate chips.Roll in 1 inch balls on ungreased cookie sheet and flatten with fork.Bake at 350 degrees until lightly browned -remove from sheet when cool._________________________________________________________________
Peanut Butter chocolate Chip Cookies:
In a bowl beat margarine and peanut butter with an electric mixer until well blended. Add flours, sugars, egg, baking soda and powder. Beat until thoroughly combined. Add in chocolate chips and mix with a fork. Shape into 1 inch balls, and flatten by crisscrossing with a fork. Bake at 375 for 6-8 minutes or until lightly browned._________________________________________________________________
- 1/2 cup butter or margarine
- 3/4 cup peanut butter
- 1 cup white rice flour
- 1/4 cup tapioca flour
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 bag milk chocolate chips
Really Easy Peanut Butter Cookies:
Mix well. Roll dough into balls and press flat with a fork. Bake at 350 for approx. 10 min.
