Gluten Free Cake Mix
If you're pressed for time then use a gluten free cake mix. There are some really good cake mixes available for gluten free baking.
I really benefitted from using a gluten free cake mix recently when at the last moment I was asked to bake a gluten free birthday cake for someone. I knew I was going to make a cupcake cake but didn't have all the ingredients I needed for the cake. So I used a mix.
I used a brand from Safeway which I just happened to have in my cupboard. Not the best in my opinion so I think the decorations and icing saved the day.
The mixes I've used and trust areBob's Red Mill Gluten-Free Chocolate Cake Mix
Another brand I found is Namaste Gluten Free Vanilla Cake Mix
They offer mixes for cakes, cookies, bread, muffins and crusts too.
I have yet to try this brand but reviews say they are flavourful and allow for variations to be added.
Their mixes contain no wheat, gluten, corn, soy, potato, dairy, casein, tree nuts or peanuts and are:

- Made with NO genetically modified ingredients
- Kosher certified
- A great value - get more for your money
So, back to my story, with precious little minutes to spare I managed to get the buttercream icing made while the cakes were baking. Then sourcing out the decorations online I printed out a silhouette of a skateboarder and glued it to cardboard. The cake turned out great and was really appreciated. As usual,in my haste I didn't get a picture!!
Other brands of gluten free cake mix are Betty Crocker and Glutino. I've noticed that grocery stores like Safeway and IGA make their own brand of gluten free products and stock others as well. I personally prefer homemade anything but the mixes are made for convenience and some are really good.
Try adding different baking elements to mixes to see what you come up with.
- Swirl chocolate and vanilla cake mix to create a marble cake.
- Add carrots, nuts and raisins to spice cake mix to create a carrot cake recipe.
- Add blueberries to a lemon cake mix for luscious blueberry lemon cake.
